DO ROCKS STILL RULE?
Q I am replacing a bbq and have to decide between briquettes and a
stainless flame tamer. Having always cooked over volcanic rock, and enjoying
that vapourising beer smell in the food, I can't imagine that stainless will give the
same result. What is your opinion?

A Ian, I have always favoured the volcanic rocks. But recently I switched over to
ceramic blocks in a cast iron frame and, to be honest, can't detect any difference.
My brother-in-law's barby has stainless flame tamers and, once again, they work well.
In fact, there seems to be even more vaporisation with that material.
I don't cook steaks on my gas barby very often these days because my taste
buds are either wearing out or most steaks lack a real 'meaty' taste.
I much prefer to use a Hibachi or Weber and cook over charcoal studded with
a few wood chips. That's the only way I seem to be able to get some ‘outdoors’ flavour
into the meat.
