WHOLE FISH ON THE BARBY

I wont to cook a hole fish for my boyfriends birthday.

How long will it take in my barbecue? Its gas.

Linda, I really think you've become a bit of a slave to your

spill chucker.

You don't give me much information but here goes. I would not try to

cook the fish (as a Bondi girl, you'd probably pronounce it 'fush') whole

unless your barby has a hood. Lay it on a foil tray (upright is best - use

lemons cut in half and laid face down to support the sides) or place in a

special fish basket (available from bbq shops and camping supply stores).

Don't wrap the fish completely in foil as many barbecue cookbooks tell you.

If you do that, you might as well put it in your kitchen oven - it will taste

exactly the same. Remember to add some hardwood chips - few flavours

combine better than fish and wood smoke.

The actual time will vary depending on the size of the fish and the design of

your barby. In my hooded four burner, I would allow about 45 minutes for a 2

to 2.5 kilogram fish being cooked indirectly (no heat under the fish). However,

I'd check for doneness before I removed it from the barbecue. Aim for moist

flesh that flakes easily when tested with a fork.
