Q I have a Weber and need to cook a 6 kilo pork roast for Boxing Day to
impress the rellies and am unsure on how long I need to cook it for and how
many briquettes to use. Could you also send an email address if there is one
on a Weber site?

A Hi Jenny - if I ever get a satisfactory explanation of exactly what briquettes
contain, I might consider trying them. Until then, I'll stick to good old natural
charcoal.
So I can't help you from personal experience with a quantity to use.
In the Complete Australian Barbecue Kettle Cookbook (reviewed in Blue
Books), the authors recommend 3 to 3.5 hours for a 5 to 6 kg leg of pork.
They say you need a very hot fire to get crackling on the pork (and to make
sure it gets cooked through - undercooked pork can be deadly). They call a
hot fire one with 120 briquettes - 60 on each side (a normal fire comprises
90).
