Q I hope you can help me. I have followed your instructions about roasting/smoking
but I can't seem to get meat cooked evenly. It always comes out a bit pink inside even
when
it has had a couple of hours plus cooking in my Weber. What's wrong?

A Oh, Kevin it's not raw,
it's what is termed a 'smoke ring' by some bbq artistes. It's
a chemical reaction to heat and moisture that takes place in the meat and can colour it
from dark pink/red (nearer the outside) to pale pink. It is harmless, doesn't affect the
flavour and is not an indication of undercooking.
Have you really been throwing out pork and chicken because you thought the food was
undercooked after several hours in a blazing Weber? What a waste. You could have
used the roasts as missiles against the neighbours' yapping poodle, wheel chocks for your
car or stacked them in a pile in the garden and called it outdoor art.
